Ingredients:

  • 4 large potatoes
  • 4 cups of water
  • 2 tablespoons of apple cider vinegar
  • Salt to taste
  • Oil for frying (preferably sunflower or peanut oil)

Peeling and Cutting the Potatoes: Peel the potatoes and cut them into thin strips, the desired size for fries. It’s important that all the strips are of similar size to ensure even frying.

Soaking in Vinegar Water: In a large bowl, mix the water with the vinegar. Add the cut potatoes and let them soak for 30 minutes. This helps remove excess starch and contributes to achieving a crispy texture.

Rinsing and Drying: After 30 minutes, drain the potatoes and rinse them well under cold water. Then, dry them completely using kitchen towels or paper towels. It’s important that they are as dry as possible before frying to avoid splattering hot oil.

First Fry: Heat the oil in a deep fryer or deep pan to about 160°C (320°F). Fry the potatoes in small batches for 3-4 minutes until they turn light yellow. This is the first fry, which cooks the potatoes without browning them. Remove them and let them drain on paper towels.

Second Fry: Increase the oil temperature to 190°C (375°F). Fry the potatoes again in small batches for about 2-3 minutes until they become golden and crispy. Remove and let them drain again on paper towels.

Seasoning: Sprinkle salt over the fries immediately after taking them out of the oil while they are still hot. You can also add other favorite seasonings like black pepper, paprika, or garlic powder.

Potato Variety: For the best results, use high-starch potatoes, such as Idaho or Russet potatoes.

Extended Soaking: If you have extra time, you can soak the potatoes in cold water overnight in the fridge. This will further enhance their crispiness.

Reheating Fried Potatoes: If you have leftover fries, you can reheat them in the oven at 200°C (400°F) for 10-15 minutes to make them crispy again.

Vinegar helps make the potatoes crispier by breaking down the pectins inside them. It also helps maintain their golden color and prevents oxidation.
