  • 2 cups of filtered water

Instructions

  1. Prepare the Peel: Cut the clean banana peel into smaller strips or 2 cm pieces to increase the surface area for extraction.
  2. Combine: Place the banana peel pieces, whole cloves, and bay leaves into a small stainless steel or glass pot.
  3. Simmer: Add the water and place the pot on the stove over a low flame. Allow the mixture to reach a very gentle simmer.
  4. Slow Cook: Maintain the slow fire for 15 to 20 minutes. Do not let it reach a rolling boil; a gentle simmer preserves the delicate compounds in the bay leaves.
  5. Strain: Turn off the heat and let the liquid sit for 5 minutes. Strain the infusion into a mug, discarding the solids.
  6. Serve: Drink this warm, ideally in the evening or about an hour before sleep.
