Roasted Beet and Rosemary Infusion

Ingredients
- 2 medium beets, scrubbed and quartered (keep the skins on for maximum mineral content)
- 1 large sprig of fresh rosemary
- 1 teaspoon of apple cider vinegar
- 4 cups of filtered water
- A pinch of sea salt
- A small slice of fresh ginger (optional)
Instructions
- Preheat your oven to 200ยฐC. Place the quartered beets on a small baking tray and roast for 20 to 25 minutes until they are slightly tender and fragrant.
- Transfer the roasted beets into a medium pot and add the 4 cups of filtered water.
- Add the fresh rosemary sprig, the apple cider vinegar (which helps extract the minerals), and the ginger if using.
- Bring the mixture to a very gentle simmer over low heat.
- Cover and let the infusion steep for 30 to 40 minutes. The water should turn a deep, opaque ruby color.
- Strain the liquid into a heat-safe glass jar or teapot, discarding the solids.
- Add a tiny pinch of sea salt to enhance the earthy notes and provide trace electrolytes.
- Serve warm in a ceramic mug.
