Ingredients

  • 2 teaspoons Nescafe (or your favorite instant coffee)
  • 2 fresh organic egg yolks (at room temperature)
  • 2 tablespoons raw honey
  • 1 cup hot water (not boiling, around 80ยฐC to 90ยฐC)
  • 1/2 teaspoon cinnamon (optional, for a warm aromatic finish)

Instructions

  1. Separate: Carefully separate the egg yolks from the whites. Place the two yolks into a medium-sized glass or ceramic bowl.
  2. Whisk: Add the honey to the yolks. Using a hand frother or a whisk, beat the mixture vigorously for 3 to 5 minutes. The goal is for the mixture to become thick, pale yellow, and nearly double in volume.
  3. Brew: In two separate mugs, dissolve 1 teaspoon of Nescafe into 1/2 cup of hot water each. Stir until completely smooth.
  4. Combine: Gently spoon the whipped egg and honey foam over the top of the hot coffee in each mug. The foam should sit elegantly on top of the liquid.
  5. Finish: Dust the top with a pinch of cinnamon if desired.
  6. Serve: Drink immediately while the coffee is hot and the foam is light and airy.
