Beet Slice Regeneration

Ingredients
- 1 large Fresh beet (with the top crown intact)
- 1 shallow Glass or ceramic dish
- 1 cup Filtered water
- 1 pot Filled with organic potting soil
Instructions
- Slice the Beet: Cut off the top 1 to 2 inches of a fresh beet. Ensure the “crown” where the leaves emerge is undamaged. You can enjoy the rest of the beet in your cooking.
- Water Induction: Place the beet slice, cut-side down, into a shallow dish. Add just enough water to cover the bottom half of the sliceโdo not submerge the top crown, as this can cause it to rot.
- Monitor Growth: Place the dish in a sunny windowsill. Change the water every day to keep it fresh and clear. Within a few days, you will see small green sprouts emerging from the top and fine white roots growing from the bottom.
- Transplant to Soil: Once the new roots are about an inch long and the leaves have begun to unfurl, it is time to move the beet to the soil. Dig a small hole in your potting soil and gently place the beet slice inside.
- Cover and Water: Cover the slice with soil until only the new green sprouts are visible above the surface. Press the soil down gently and water thoroughly. Keep the soil moist but not waterlogged as the plant settles into its new home.
