Roasted Beet and Rosemary Infusion

Roasted Beet and Rosemary Infusion

Ingredients

  • 2 medium beets, scrubbed and quartered (keep the skins on for maximum mineral content)
  • 1 large sprig of fresh rosemary
  • 1 teaspoon of apple cider vinegar
  • 4 cups of filtered water
  • A pinch of sea salt
  • A small slice of fresh ginger (optional)

Instructions

  1. Preheat your oven to 200ยฐC. Place the quartered beets on a small baking tray and roast for 20 to 25 minutes until they are slightly tender and fragrant.
  2. Transfer the roasted beets into a medium pot and add the 4 cups of filtered water.
  3. Add the fresh rosemary sprig, the apple cider vinegar (which helps extract the minerals), and the ginger if using.
  4. Bring the mixture to a very gentle simmer over low heat.
  5. Cover and let the infusion steep for 30 to 40 minutes. The water should turn a deep, opaque ruby color.
  6. Strain the liquid into a heat-safe glass jar or teapot, discarding the solids.
  7. Add a tiny pinch of sea salt to enhance the earthy notes and provide trace electrolytes.
  8. Serve warm in a ceramic mug.
