Instructions:
Heat the Dairy: In a heavy-bottomed pot, combine the milk and heavy cream. Heat over medium-high, stirring occasionally to prevent scorching, until it reaches a gentle boil (about 82ยฐC or 180ยฐF).
Curdle: As soon as it boils, reduce heat to low and add the lemon juice one tablespoon at a time. Stir gently for about 1 minute. You should see the milk separate into white clumps (curds) and a yellowish liquid (whey).
Rest: Remove the pot from the heat and let it sit undisturbed for 15โ20 minutes.
Strain: Line a colander with a clean, fine-weave cheesecloth or a large coffee filter. Place the colander over a bowl. Pour the mixture into the cloth.
Drain: Let the whey drain for at least 1 hour at room temperature. For a thicker, firmer cream cheese (like a block), tie the corners of the cloth and hang it over a bowl in the refrigerator for 6โ12 hours.
Smooth: Once drained to your liking, transfer the curds to a bowl or food processor. Add the salt and blend for 1โ2 minutes until the texture is perfectly smooth and glossy.
Storage: Store in an airtight container in the refrigerator. It will stay fresh for up to 7 days.
